Ingredients:
- 2 tbsp. of oil
- 1 medium onion
- 2 medium carrots
- 1 ½ minced fresh ginger
- 2 cloves of garlic
- 1 head of cauliflower cut into pieces
- 4 cups of vegetable broth
- ½ cup red lentils
- ½ salt to taste
- 2 tsp. of coconut milk
- ½ tsp. pepper
- 1 tsp. curry powder(optional)
Method:
- Heat a heavy pot, over medium heat. Once hot add oil, onions, carrots and sauté for 5 minutes.
- Add ginger garlic and sauté for 2-3 mins or until fragrant.
- Add cauliflower, broth, lentils and salt. Add curry powder (optional).
- Bring to a boil over medium heat and cook on low heat. Cover and cook for 15 minutes or until lentils and cauliflower are tender.
- Add coconut milk and blend with a hand blender until creamy and no chunky bits remain
- Taste and adjust seasonings, adding more salt and pepper for overall flavor.
- Continue cooking for a few more minutes over medium heat.
- Serve warm.
